Guilt-free Valentine’s Day

Valentine’s Day can be a tricky day of the year. This can be a big day of emotional eating for those feeling lonely, or can be a day of indulgence for those who go out with their special someone. Sweets are a common theme on this day, but now is the time for you to not feel ashamed when you reach for that extra truffle in the breakroom at work. Valentines’ Day is all about balance, planning, and a day to appreciate not just your loved ones, but yourself!!

Always plan ahead!! If sweets are a weakness for you, it is okay to include them in this special day. It only happens once a year, so it is okay to plan ahead for these special occasions. There is always room for your favorite foods. Focus on planning your meals ahead of time, and avoid skipping meals. Fill your plate with lots of whole grains, fruits, veggies, and lean proteins, to keep you full throughout the day. Keeping yourself fueled throughout the day can help prevent that act of mindless eating, or the need to eat out of boredom. When it is time for dessert, try to incorporate some fruit! Dark-chocolate covered strawberries or pineapple is a great example to help satisfy that sweet craving, while still providing lots of vital nutrients.

Finally, lets think about mindful eating. Listen to your body!! Do not ignore your hunger cues. Your stomach is growling for a reason…don’t ignore it. During meal times, tune into your emotions. It is important to bring together the emotional and physical sides of eating. Take your time when eating. Try to avoid completing other activities during mealtimes, to allow you to focus on the task at hand. How does this meal make you feel, physically and emotionally? And remember, this is a special day. Don’t hate yourself for indulging a little more than most days. Including healthy foods with your sweet treat is the best way to go. This is a marathon, not a sprint….so it is okay to allow those special treats every once in awhile.

Dark Chocolate and Pistachio- Covered Strawberries

Ingredients:

4 oz dark chocolate (60-70%), finely chopped

1/2 Cup roasted pistachios, finely chopped

12 large strawberries

Directions:

  1. Line a baking sheet with foil. Double boil chocolate in a heatproof bowl over a simmering pot of water. Stir occasionally until chocolate has melted. Let chocolate cool for 5 minutes. Place pistachios in a small bowl.

  2. One at a time, hold a strawberry by the stem and dip into chocolate. Coat about 2/3 of each strawberry. Allow excess chocolate to drip off and immediately dip into pistachios. Place strawberries onto baking sheet and refrigerate for 10 minutes, or until chocolate is firm.
