Surviving the Super Bowl
If you’re anything like me, the best part about the super bowl isn’t the game, but the snacks and the commercials. Wings, nachos, beer…all challenges when you’re trying to live a healthy lifestyle. It’s okay to enjoy these foods, but also important to focus on not over indulging. Instead of grabbing a plate full of nachos, try to incorporate more protein and veggies onto your plate. Filling up on veggies and lean proteins first, will make you less likely to indulge. If you are going to a party at someone else’s house, volunteer to bring the veggie platter or turkey chili. There is no shame in being prepared.
Don’t forget to stay hydrated! If you plan to drink alcohol, it is vital to keep up your water intake. Your body will definitely thank you the next morning if your water intake is the same as your alcohol intake. Go for the light beer or hard seltzer instead of the sugary mixed drinks. Always drink responsibly.
Finally, have fun! Food-based events can be difficult when you are trying to stay healthy, but don’t be afraid to enjoy yourself. Everything in moderation.
Baked Buffalo Chicken Bites
Ingredients:
2 lb boneless, skinless chicken breast
3 Tbsp hot sauce
2 Tbsp margarine
2/3 cup breadcrumbs
1 tsp garlic powder
1/2 tsp onion powder
Directions:
Preheat oven or air fryer to 425.
Cut chicken into 1.5” cubes.
Whisk together hot sauce and margarine in a bowl. In a separate bowl combine breadcrumbs, garlic powder, and onion powder.
Mix the chicken pieces with the hot sauce mixture until evenly coated. Toss the chicken in the breadcrumb mixture.
Lightly spray a baking sheet. Lay the chicken pieces on a baking sheet.
Bake for 8-12 minutes. If using oven, place on broiler for final 2 minutes to make chicken extra crispy.
